Tuna, chickpea and avocado salad
14 oz can chickpeas, drained and rinsed
14 oz can tuna in water, drained and flaked
1 red onion, cut into thin wedges
2tbsp finely chopped gherkins
1 tbsp chopped fresh dill
-2 tbsp white wine vinegar
-4 tbsp olive oil
-1 tsp Dijon mustard
-1/2 tsp fructose
-2 tbsp freshly grated Parmesan
-salt and pepper
Mix together the ingredients for the dressing, using a hand-held blender if you have one. Season with salt and pepper.
Halve the avocados and remove the stones. Spoon out the flesh and cut into dice.
Combine the tuna, avocado, chickpeas, red onion, gherkins and dill in a salad bowl. Pour over the dressing and gently mix everything together.
