 Greek flatbread pizza





  • 1 medium flatbread dough (can be replaced with pizza crust)

  • ½ cup of sugar-free pizza sauce

  • ½ cup of chopped spinach

  • ½ small onion, chopped

  • ¼ cup of cheddar , chopped

  • 5 slices of mozzarella , sliced

  • 1 tbsp of dry oregano

  • 1 tbsp of olive oil

  • few olives

  • 1 medium-sized onion , sliced

  • ¼ eggplant, sliced

  • ½ large tomato, sliced





Preheat the oven to 350 degrees. Lay the flatbread on a baking sheet. Spread the sauce over the dough. Now add the spinach and the onions. Make a final layer with cheddar and mozzarella. Top with sliced eggplant, tomato, and more onions. Add oregano, few olives and drizzle the olive oil. I like to add a couple of bay leaves for extra flavor, but this is optional.
