Greek flatbread pizza
INGREDIENTS

1 medium flatbread dough (can be replaced with pizza crust)

½ cup of sugar-free pizza sauce

½ cup of chopped spinach

½ small onion, chopped

¼ cup of cheddar , chopped

5 slices of mozzarella , sliced

1 tbsp of dry oregano
-
1 tbsp of olive oil
-
few olives
-
1 medium-sized onion , sliced
-
¼ eggplant, sliced
-
½ large tomato, sliced
METHOD
Preheat the oven to 350 degrees. Lay the flatbread on a baking sheet. Spread the sauce over the dough. Now add the spinach and the onions. Make a final layer with cheddar and mozzarella. Top with sliced eggplant, tomato, and more onions. Add oregano, few olives and drizzle the olive oil. I like to add a couple of bay leaves for extra flavor, but this is optional.
